California wonder bells will turn red when ripe, but most often they are eaten when mature and green. After nearly a century the famous California Wonder bell pepper is still the largest heirloom bell pepper available for for the home gardener. These open-pollinated bell peppers will produce wonderful upright plants that are 18 to 24 inches tall with very sweet, flavored, thick fleshed fruits that start out glossy green, with three to four lobed globes and then mature to a bright glossy red.
The pepper was first introduced in 1928, the fruits are culinary staples, whether stuffed, chopped fresh into salads or grilled beside fajitas.
When you move to plant peppers outside, your plants will do better once temperatures are staying above 55 degrees F. at night. Before that, they will grow quite slow. Plant seeds at a depth of 1/4".
Starting pepper plants indoors is best for most hardiness zones because growing bell peppers require this higher nighttime temperature. This way it gives the climate time to warm up.
